The Art Of Mexican Food - Enchiladas

Enchiladas The versatile enchilada is thought to have evolved from Papadzules (papak-tsuls), a traditional Mayan dish. The Mayan people of Southern Mexico filled corn tortillas with special ingredients and then covered them with tomato sauce. Meaning "food of the nobles" Papadzules were reserved for special occasions and royalty. Likewise, serving enchiladas can transform your family's evening meal into a celebration.
