How to make Tamales The basic tamale recipe calls for seasoned meat placed inside a layer of cornmeal dough(masa), that is then wrapped in corn husks and either baked or steamed. Although the exact origin is not known, tamales were a common dish of the Aztecs in Mexico prior to the arrival of the Spaniards. There are dozens of variations for tamales recipes. Many cooks in Mexico also serve sweet tamales, usually filled with fruit.

How to make Tamales

Spread Masa on moist corn husk

Step #1:
Soak corn husks (Hojas) in warm water to soften.

Step #2:
Spread masa (purchased or homemade) into moist husk with a large spoon across the wide bottom.

Place favorite filling in masa Step #3:
Place favorite filling into the masa.
Fold edges of tamale Step #4:
Fold by turning on edge in then top and remaining edge.
Place in double boiler Step #5:
Spread tamales in a large pot or double boiler covered for 25-35 minutes.
Serve Tamales Step #6:
Serve by removing and discarding husk, garnish with fresh vegetables or your favorite sauce.
