Quick Combos

Quick Combos are ideas submitted by El Monterey fans for speedy dips and salsas to super easy casseroles.

Quick Combos Should:
1) Be specific about flavors (“for example, say BBQ sauce mixed with ranch dressing” … not just “any salad dressing”).
2) Have no more than three ingredients in addition to the El Monterey product.
3) Require almost no preparation time.

Salsa, sour cream and fresh cilantro mix

Take your favorite salsa and mix just a bit of it with sour cream - make sure to add just enough, so that is doesn't becoming runny! Then top it with fresh cilantro. I like to use this on El Monterey burritos, taquitos and Tornados.

Taquito Salad

Toss 5 Beef Corn Taquitos, Baked and cut into 4ths with
1 bag of Spring Mix Salad Greens (add sliced tomato and red onion, if desired)
Dress with -
1/4 cup of Lowfat Ranch Dressing mixed with 1/4 cup of chunky salsa. Use dressing as desired.

Cinco de Mayo dip

All you need is smashed avocados, however many you desire, and that will be your bottom. Middle layer will be sour cream, and top layer will be tomatos. This dip will go well with any El Monterey product and it is festive!

Avocado Cottage Cheese Dip

4 avocados
1 container of cottage cheese
Chile of your choice


Take 4 avocados, smash them, and then in a bowl add cottage cheese and chile. Mix it all up and add lemon, salt and pepper if needed. Then add the dip to your favorite El Monterey product!

Breakfast Beef Chilaquiles

Take 3 Shredded Beef Corn Taquitos and slice up each one into pieces and cook in a skillet with a 2 tblspn of onion and green peppers. Once the onions and green pepper are soft. Add 1 egg.
Eat as is or put in a flour tortilla with hot sauce.

Guacamole Dip Recipe

Two avocados, 1 diced up tomato, 1/2 cup of diced white onion, 1/2 cup of diced cilantro, and a few drops of fresh squeezed lemon juice. Mix with two forks.

Hot Lemon Salsa Verde Dipping Sauce

Blend One cup of fresh squeezed lemon juice (about four large lemons), 6 to 8 Serrano Peppers (depending on how hot you like it;), and one clove of garlic. Blend for on low for about 30 seconds.

Verde Casserole

1 box Shredded Beef Taquitos
1 can of Salsa Verde
10oz Shredded Jack Cheese

Put taquitos in baking tray cover with Salsa Verde and top with shredded jack cheese. Bakt at 350 for about 25 min. Serve with sour cream is desired.

Try this at your next BBQ... While the grill is heating up (Charcoal or Gas) roll on some El Monterey Taquitos (flour or corn, whatever you prefer). They'll heat up nicely in just a few minutes and make a great hot appetizer while the meat is cooking. They'll go great with any Salsa, Guacamole, or Sour Cream you've probably already got for the party. This is a snack that keeps everyone happy while the chef takes his or her time with the main course.

Avocado Dip

To make the avocado dip I put 2 avocados, 2 cups sour cream, and 1/2 cup of milk in the blender. Salt and pepper for spice. I use the dip for taquitos, tornados or as a burrito topping.

For added flavor you can throw in cilantro, 1/2 an onion, and a jalapeno.

Put a Family Pack of burritos in a 9x13 pan. Cover with enchilada sauce and bake for 30 mins. at 375, then add cheese and chopped green onions and bake for 10-15 mins. more. My family loves your burritos! Thanks for a great product.

Your frozen Chicken Taquitos have become a real hit at parties, cut in half, toothpicked and served with sour cream and salsa for dipping. We also enjoy them ourselves quite often, and heartily recommend this "undiscovered treasure" to anyone wanting to enjoy, or serve, something a little different.

Easy Enchiladas

Ingredient List: 1 box of corn taquitos, 1 can of enchilada sauce, 1 can sliced black olives, 1 med. onion diced, 1 pkg. shredded cheese.

Instructions: Place taquitos in glass baking dish, pour on half of enchilada sauce, spread onion and black olives over top, spread cheese on top. Pour remaining sauce over all. Bake uncovered in 350 degree oven until warm and bubbly, about 40 minutes.

Tex-Mex Burrito Casserole

Put 6-8 Burritos in Casserole dish. Pour 2 cans of Chunky-Style Chili with Beans over the burritos. Top with 8 oz. of shredded cheese. Cover with foil and bake for 30 minutes at 375 degrees. Remove foil and bake 10-15 more minutes. You won't believe how easy and delicious this is!

This is simply half and half BBQ and Ranch Dressing. My son and his friends invented this dip. They like it so much, I had to go buy more Taquitos! Now they've got me hooked on it too.

First, follow the directions on the box to oven bake the taquitos. Then, remove them from the oven and cover with shredded cheese - whatever you favorite kind is. Put back in the oven until the cheese melts - usually less than 5 minutes. The best of nachos and taquitos!
